Blood fats include cholesterol and triglycerides, essential lipids used for energy and cell repair. These are both contained in the food we eat but also made by the liver before being transported to every cell in the body, with any unused lipid particles taken back to the liver for re-processing.  When the levels of lipid delivery are too high and out of balance with the levels of lipid return and clearance from the blood by the liver, they stick to the artery walls. They are then absorbed into the wall and evoke a strong chronic inflammatory reaction leading to the build-up of ‘fatty plaque,’ the cause of cardiovascular disease.
